St. Patrick's Day

Happy St. Patrick's Day!!

I have to admit, I have never been one to celebrate St. Patty's Day much,
however there are so many great Pinterest recipes out there to celebrate the holiday,
and now that I am a McClain - McClaine of Lochbuie to be exact
(I did the research this past fall for a family Christmas gift) - I feel as though
I should be grateful for my my husband's heritage.

DIY: Homemade Frosty Paws for you Dog!

Recently, my friend Diane sent me this recipe 
to make your own frozen dog treats! 
I have bought Frosty Paws for our dog Lizzy before, 
but find them a bit expensive for 4 little cups for a dog. 

But once, I saw this recipe and the few healthy, dog-friendly ingredients, 
I knew I had to try this. 
It was so simple and an adorable treat for our four-legged family member. 

She LOVED it!

Shopping List:

32oz Greek Yogurt

2 Bananas

2 Tbsp Peanut Butter
Method:

1. Please greek yogurt, bananas, and peanut butter in a blend and blend until smooth.
2. Pour into individual servings (I used yogurt cups) and freeze. Let your Furry Friend enjoy!!

Slow Cooker Lasagna Soup

I saw a similar recipe on Pinterest, but then I thought... 
...I could definitely make this a crockpot friendly soup! 

And the best part is... it's only 225 calories!! 
Let me say that again. 225 calories. 
That's it! 

I also have to confess that I was skeptical about this 
as I watched it simmering in the slow cooker

But Hole. Lee. Cow. 

It is one of the best dinners I have EVER made. Ever. 

Just give this a whirl and your family will be thanking you. 
Your schedule will be thanking you (I mean its a slow cooker recipe!). 
Your tastebuds will be thanking you.
Your hips will be thanking you (225 calories! Did I mention that yet?!). 
You will be thanking you.

Slow Cooker Lasagna Soup

Slow Cooker Crock Pot Lasagna Soup
 

Slow Cooker Crock Pot Lasagna Soup
 

Shopping List:

2 Tbsp Olive Oil

1 lb Ground Italian Sausage Meat

1 White Onion, chopped

32 oz Chicken Broth (sodium reduced)

1 15oz can Petite Diced Tomatoes

1 15oz can Tomato Sauce

1 tsp Crushed Red Peppers

1 Tbsp Minced Garlic

Pinch of Salt and Pepper

4 oz Whole Wheat Lasagna Noodles, broken into pieces
(About 4 whole noodles)

Mozzarella Cheese (topping)

Whole Wheat French Baguette

Method:

1. Brown sausage and chopped onion in olive oil.
2. Add chicken broth, diced tomatoes, tomato sauce, crushed red peppers, garlic, salt and pepper to slow cooker.
3. Add browned meat and onions.
4. Cook 4 hours on high or 6-8 hours on low.
5. 10-15 minutes before serving, add lasagna noodles to slow cooker.
6. Serve hot topped with mozz cheese and a slice of whole wheat french baguette. Enjoy!

Grasshopper Mini Bundt Cakes for St. Patrick's Day

I was inspired by this fun little recipe from the Mix and Match Mama.

I actually designed my recipe from just looking at the picture, 
but now I see that our recipes are very similar. Just a few tweaks.

And having just purchased a mini bundt cake pan
I thought this the perfect time to use it.

So if you are looking for an adorable (and easy!) 
You have come to the right place.

Grasshopper Mini Bundt Cakes

St Patricks Day Grasshopper Mini Bundt Cake Recipe
Shopping List:

1 box Chocolate Cake Mix

3 Eggs

1/3 C Canola Oil

1 C Water

1 14oz container of White Icing

1 tsp Mint Extract

Green Food Coloring

Green Gel or Cooking Icing

Method:

1. Preheat oven to 350. My mini bundt cake pan is non-stick so I did not need to spray with cooking spray, however if you do not have non-stick, I recommend doing so.
2. In a stand mixer bowl, combine cake mix, eggs, oil, and water. Blend for 2 mins on medium speed.
3. Spoon batter into mini bundt cake pan. Bake for 18-20 mins or until toothpick inserted comes out clean. Cool cakes on wire cooling rack completely.
4. Add 1 tsp mint extract (or to taste) and a few drops of green food coloring to icing and stir. Remember, a few drops of food coloring goes long way.
5. Frost bundt cakes. Design a 3 or 4 leaf clover on top using gel or cookie icing. Enjoy!

Avocado Egg Breakfast

I've been away for a few days while
the stomach flu has ravaged my house. Ugh! 

But now back from the dead and after lots of Pinterest time, 
I have a few recipes I can't wait to share this week!

This little Pin-spired recipe is easy to make and the perfect little breakfast 
loaded with healthy fats and omega-3s to jump start your metabolism. 
Oh, and did I mention it's super tasty?!

Avocado Egg Breakfast
Shopping List:

1 Avocado

2 Eggs

Salt and Pepper to taste

Method:

1. Preheat oven to 425.
2. Slice avocado in half and remove pit. Scoop out about another tbsp of avocado to make room for egg.
3. Crack egg into each half of avocado.
4. Place in a small baking dish. Bake for 15-20 mins or until egg white is set.
5. Top with a pinch of salt and pepper. Enjoy!

Orange Blueberry Smoothie

I have really been getting into using my juicer and my Vitamix blender lately. 

When trying to eat healthy, I try to think of it as adding the good things 
into my diet instead of refusing the bad things. 
I have a serious sweet tooth. Serious. 
So telling me not to eat sweets goes over like a lead balloon. 
But if I can think of it as trying to pack as many foods into my diet 
that fuel my body to operate at its best, I can get more excited about that. 

And two of the best small appliances to do this is... 



...and my Vitamix Blender


You can pack so many fruits and vegetables into one little juice or smoothie! 

I whipped up this Orange Blueberry Smoothie this morning for breakfast.
 I was pleasantly surprised by how delicious it was! 
I'll definitely be making this more often!

Orange Blueberry Smoothie


Shopping List:

1 Orange, peeled and quartered

1/4 C Orange Juice
(I used Simply Orange, No Pulp)

1/4 C Frozen Blueberries
(When fruits are out of season, 
frozen fruits are a less-expensive alternative. 
Plus, it keeps the smoothie nice and cold.)

1 serving Blueberry Yogurt
indiviual yogurt pack.)

1/4 C Frozen Strawberries

1 pinch Chia Seeds

1/2 C Ice Cubes

Method:

1. Combine all ingredients in a blender and blend until smooth. (If using a Vitamix, blend for 1 minute on high).
2. Enjoy!
